RECIPE: Chilli Cheesy Pancakes

Chilli Cheesy Pancakes (serves 4-6)
What you'll need:
For the pancakes:
2½ teaspoons baking powder
1 pinch of salt
2 large eggs (beaten)
30g butter (melted and cooled)
300 ml of milk
225g plain flour
Butter for frying
For the toppings:
200g Emmental Cheese grated, you could use Cheddar or Gruyere
2 x 20g Packs of Chilli Cheesies
4 slices of Prosciutto, any ham you have knocking about works though
Fresh Chives
Salt & pepper
Method:
- Make a well in the flour, baking powder and salt, then beat in the eggs, melted butter and milk
- Transfer to a jug. It's much easier to pour the batter into the pan than to spoon it
- Heat a smooth griddle or pan
- When you cook the pancakes, all you need to remember is that when the upper side of the pancake is bubbling it's time to cook the second side, and this needs only about 1 minute if that
- This should make about 16 pancakes
- Top the pancakes with Emmental cheese & prosciutto and place under the grill to melt
- Scatter the Chilli Cheesies on the top, as well as chopped fresh chives and salt & pepper for that final flourish
- Tuck in & enjoy
